Revolutionary History
War Cannon Spirits is located in the Champlain Valley between two 18th-century British and French forts that were built along the scenic shores of Lake Champlain - Fort Crown Point and Fort Ticonderoga.
Our tasting room, Defiance Hall, is housed in a fully restored circa 1820 sawmill in Crown Point. Eight miles south is our production facility, situated on a 22-acre farm in Ticonderoga.
Rebellious Spirits
Bespoke Grains - Our grains are cultivated by small regional farms, specifically for distilling, and selected for their organoleptic qualities.
Barrels - Our barrels use regional Northeastern oak, which grows much more slowly and has a tighter grain. This tighter, higher-density wood is more comparable to English and European oak. Northeastern oak creates a different flavor profile from the more commonly used Southern oak barrels. Northeastern oaks tend to have a spicier, more robust flavor with elements of cinnamon, allspice, and nutmeg.
Alembic Batch Distilled - Unlike macro brands, we exclusively utilize a traditional, small-scale alembic batch distillation process, similar to those used in Scotland.
Blending - Large distilleries must dump massive quantities of barrels to achieve volume and ensure uniformity. We believe that the main appeal of boutique distillation is the unique flavors and personality that come from being selective with barrels — and we think you will too.
